Outback Matty’s Passion for Cooking!
Today I am recognised as ‘Outback Matty’ from my work in the culinary field. When I enrolled in a TAFE course I had no idea that just a few years later I would be working at Vue de Monde, the most prestigious French restaurant in Australia.
Attending Box Hill Institute of TAFE, Melbourne, I studied for two years on a full-time basis until I completed certificate III in cooking. Even with work experience at Jamie Oliver’s Fifteen Program it was frustrating trying to get my foot in the door. Working at Fifteen and studying at the same time gave me a diversity of skills as a chef.
Gaining the formal qualification gave me an advantage in the workforce as there is a lot of competition out there. The course really helped me to experience what it would be like working in the real world and I really enjoyed that factor. TAFE is very practical and hands-on.
The training also provided the opportunity to make networks and get support from other professionals in the field. Finishing my course over two years suited my lifestyle as I was keen on getting out into the workforce quickly to establish my career. Having that support and flexibility through TAFE was very valuable.
Essentially my course provided me with the basic knowledge of the industry and gave me more belief in myself. It could be challenging at times but very rewarding. Since approaching my local TAFE I have gone on to full-time employment and am achieving many of my career goals.
From here I hope to continue to quench my thirst for knowledge and follow my passion. I have a huge desire to explore the world and learn from the best Chefs. I hope to someday open my own restaurant and take on disadvantaged youths, building them with the confidence to pursue their goals and dreams
