Sarah Rowsell is representing Australia in Restaurant Service at the International WorldSkills Competition.
We meet her in Newcastle where she is attending a mock competition to practice for the upcoming big event.
She'll be up against the world's best preparing, carving and serving food. It's stiff competition because elsewhere in the world waitering is treated as an important career in the world's top restaurants and hotels.
