Pierre's Patisserie at Turramurra is a baking institution, a mainstay of beautiful authentic French breads and cakes. Skillsone chats to baking apprentice, Frank Barbara, who shares what's involved in being a baker and shares the secret of the perfect sausage roll. About Pierre's Patisserie: The business is owned and run by the Firina Italian family (originally in partnership with Pierre himself) who also own the Glenorie Bakery. James Firina (21) is one year out of his Baking Apprenticeship, owns and runs Pierre's with his brother Rob. They have always employed French bakers to help in the creation of their famous baguettes and breads. They employ an apprentice Frank who is about is in his third year of a four-year Baking Apprenticeship. French pastry chef, Landry will also be there. Baking is a good career choice because the teamwork that goes into making so much fresh produce each day is fun and very rewarding. The baguettes at Pierre's are very famous as well as their delicious French cakes and they won best sausage roll Gold Medal at the 2007 Newcastle Baking Show. The also won Business of the Year for the North Shore amongst many other awards for their pies and cakes. We are going to see the making of their famous sausage rolls because it takes teamwork and is lots of fun.
